Healthy Pita Pizzas

I really love pizza but try not to eat it too frequently for all the boring health & nutrition reasons (cheese, carbs, oil, more cheese, blah blah blah...) Anyhow, in a desperate attempt to make pizza more healthy I created this recipe making pizza out of whole wheat pitas and low-fat cheese. Although it's not as good as the real deal, it's a good quick meal and it satisfies the pizza craving. Here you go!

Pita Pizza

Ingredients:
Whole wheat pitas
Low-fat mozzarella cheese
Parmesan cheese
Pizza sauce
Spinach
Portobello Mushrooms
Cooking spray

Directions:
1. Preheat oven to 425 degrees F.
2. Spray a baking sheet with cooking spray.
3. Place pitas on the tray.
4. Spread pizza sauce on top of each pita.
5. Place spinach leaves on top of sauce.
6. Sprinkle low-fat mozzarella cheese on top.
7. Cut portobello mushrooms into strips and place on top of cheese.
8. Sprinkle Parmesan cheese on top.
9. Bake for 8-12 minutes, or until slightly golden brown on top.

Note: You may have noticed that there are no amounts specified for the sauce or cheese. That is because those should be put on as desired. I prefer more sauce and less cheese, but everyone has their own preference.
