A Really Healthy Dessert: Chocolate Chip Cookie Pie!

Get ready, 'cause this is going to blow your mind....................
This gooey, fabulous dessert is extremely healthy, mainly because of one secret ingredient which sounds a little strange at first but I swear it works. The magic ingredients is.........

Beans! Specifically of the garbanzo or white variety.

I know - when I first discovered this recipe over on Chocolate Covered Katie, I was very skeptical. On the one hand the photos looked so good that I wanted to reach through the computer screen and take a bite, and there were over 800 comments praising the pie, but on the other hand I could not imagine putting beans into a dessert recipe.

Well let me tell you, it was fantastic!

Here is the recipe. Note: The original recipe calls for 1 1/2 cups of brown sugar but I substituted 1 cup of pureed dates for 1 of the cups of brown sugar, so in total I used 1 cup of date puree and 1/2 cup of brown sugar.

Here it is!

Ingredients:
2 cans of garbanzo or white beans
1 cup of quick oats
1/2 cup unsweetened apple sauce
2 T canola oil
2 tsp vanilla extract
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 cup of date puree*
1/2 cup brown sugar
1 cup of chocolate chips

* To make date puree: Combine 1 cup of pitted dates with 1/2 cup water and blend in a food processor for about 1 minute until a paste/puree has formed.

Steps:
1. Preheat oven to 350F.
2. Combine all of the ingredients except the chocolate chips in a food processor (not a blender).
3. Once the mixture is blended very well, mix in the chips and pour into an oiled 9 or 10 inch round pan.
4. Bake for 35-40 minutes. Let stand for 10 minutes and then enjoy!
