Hotel Kakslauttanen in the Arctic Circle

Hotel Kakslauttanen in the Arctic Circle truly looks like a winter wonderland. I would love to spend a couple days here in one of their breathtaking resorts. You can choose between staying in a log cabin, a traditional snow igloo or a glass igloo, all beautifully designed with breathtaking views. You can even plan a wedding there and get married in their snow chapel!

Wedding dessert option

As mentioned in a previous post, I went to a wedding last weekend on a lake in NH. It was so beautiful! Instead of a typical wedding cake, they had a table set up with different types of pies (blueberry, cherry, chocolate pecan, etc.), and a small cake in the middle. I thought this was such a great idea! From attending previous weddings (and having my own), I have discovered that wedding cakes are sooooo expensive, and they usually taste anywhere from sub-par to terrible! I thought the idea of lots of pies (and ice cream), was such a unique and creative alternative to the traditional wedding cake (and all the guests really seemed to love it)! Plus, it went well with the country theme and made a beautiful display.
