Lenny's Vegetarian Sandwich

A few blocks from my house there is a sandwich shop called Lenny's. My love affair with Lenny's started last summer when we were in NYC for a weekend looking at apartments. It was a stressful time and I remember one particularly hot day, we had been looking at apartments for hours and were exhausted. The exhaustion coupled with the overwhelming stress of moving to a new city (leaving friends, jobs, etc), well...suffice it to say I was a little unsure of NYC.

Enter Lenny's.

We met a friend at the Lenny's further down on the Upper West Side for a late lunch. I looked over the menu and noticed that they had a sandwich called The Vegetarian (#11 on their menu), and unlike many restaurants whose idea of a veggie sandwich is a tasteless bun filled with lettuce, tomatoes and cheese, Lenny's sandwich has amazing, fresh ingredients (avocado, lettuce, tomatoes, shredded carrots, alfalfa sprouts, red cabbage, sweet peppers (I get extra of these), and honey mustard). That day marked the moment that my love affair with this sandwich began and still continues without any sign of fading. This is my go-to sandwich, just ask my husband. Every time we order take-out, the conversation goes as follows:

Husband: "Want to order food?"
Me: "Yes, how about Lenny's"
Husband: "We just had Lenny's."
Me: "Sooooo? Its sooo good!"

Note: It's even better when paired with Mango Coconut Water, my absolute favorite!
